This Lentil and Brown Rice Casserole is meatless, cheap, and delicious. I used about half the cheese called for in the recipe and it was still yummy. My whole family loved it, including my carnivore husband and my picky eater son. My carnivore son rolled it in a wheat tortilla and declared it 'fantastic, Mom'.
